Stuffed Zucchini

I surf the net a lot....A LOT! I came across this awesome blog called Dutch Girl Cooking.

Her recipe for Stuffed Zucchini caught my eye and I just had to make it!

I did not use the tomato that she suggests, instead I used a roasted redpepper. And I did not use curry powder since we dont even have that in my pantry.
Not sure what it would of added to the dish, but I loved the stuffed zucchini.

My hubby and kids, not so much.

Oh well, plenty for me!
