I love soup. Even when it is not cold outside, which is not often living in Texas. So to get my soup fix, I just have to make it when I want it and if its hot outside I cut the A/C way down to make it feel like its chilly outside!
Tonight we had Famous Baked Potato Soup! Its a crock pot recipe and its one of my trusted recipes I found on Baby center Cooking for your Family Board. I usually top mine with shredded cheese, bacon bits, sour cream, and if I happen to remember to get chives. This time I didn't have the chives. I also scale it down to fit our family. And this time I sauteed the onions with some garlic before putting it into the crock pot.
This is a family favorite, even my hubby who does not like soup, will eat this. My daughter loves it and I wish I could say that my oldest son would eat it, but he is weird about his foods and he will not touch this with a 10 foot pole!

Famous Potato Bacon Soup (crock pot)

8 cups coarsely chopped peeled potatoes
1 small onion, shopped (1/3 cup)
1/2 pound bacon, crisped, drained, and crumbled
1 (8 oz) pkg. cream cheese, softened
3 cans (14.5 oz) each reduced-sodium chicken broth
1 (10.75 oz) can condensed cream of chicken soup
1/4 tsp. pepper
In a 4-qt. crock, stir together the potatoes and onion. Stir in the bacon. In a large mixing bowl, combine the cream cheese, chicken broth, cream of chicken soup, and the pepper. Add the mixture to the crock. Cover and cook the soup on low heat for 8-10 hours or on high heat for 4-5 hours. If you like, mash the potatoes slightly for a thicker consistency before serving.
