2 week menu plan

Well, we are going to be eating less meat around here. I saw a segment on the Oprah show this week and I decided that we are going to drastically cut back on the meat we eat.

So this 2 week menu plan reflects that decision. As you can see, meat is only on there 3-4 times.

Sun 10/19- Teriyaki veggie wraps and fried rice

Mon. 10/20- eggplant parmesan with noodles and marinara, spinach salad, and some kind of bread

Tues 10/21- Tofu Stir Fry and the leftover fried rice from Sun

Wed 10/22- Parmesan Crusted Tilapia, Couscous, and roasted veggies

Thurs. 10/23- Pasta e Fagoli and eggplant sammies on sourdough bread

Fri. 10/24- Kids Halloween Party so whatever everyone brings and I think they are ordering pizza.

Sat 10/25- My parents are coming into town and I asked my mom to make me chicken n dumplings And we will have buttermilk biscuits too.

Sun. 10/26- Queso Blanco Tacos (new recipe from the cookbook I bought today) and rice and beans.

Mon 10/27- Baked Lemon Spaghetti, large salad, and those rolls from the pioneer woman...LOL

Tues. 10/28-Any leftovers in the fridge!

Wed. 10/29- Christophers birthday so Im sure we will go to Chuck E Cheese that night. I can eat a salad and get me a little veggie pizza at least.

Thu 10/30- Stovetop chili( another new recipe from the vegetarian cookbook I bought) and Super Mosit cornbread

Fri 10/31- Beef tips, noodles, and some kind of veggies before heading out to trick or treat.

Sat. 11/1- Leftovers again!

Been waiting to announce....

I had been waiting to make this post because I have been trying to get the pictures scanned....but Ive come to realize that it is just not going to happen. I can't find the time to fight the scanner to make it work for me.

On October 2nd we had a ultrasound...and we found out we are expecting another little boy!

Madison wasn't thrilled at first. She really wanted a sister. But now she seems more excited about having a new little baby in the house. Christopher doesn't really know whats going on so he didn't have to much to say..LOL

Now comes the challenge of finding this guy a name....we are having a hard time with this. We both really thought this baby would be a girl so we really only talked girl names. So now that we know its a boy, we really have to start thinking about it, and for some reason its harder this time around.

Menu Plan~ October 5th- October 18th

I hope my menu planning is giving others ideas on how to mix things up and help others plan more meals instead of just flying by the seat of your pants every night.

10/5- Tacos

10/6- French Bread Pizzas with lots of toppings and a salad

10/7- No Meat Spaghetti, spinach salad and bread from the bread machine

10/8- Parmesan Crusted Tilapia, couscous and veggie.

10/9- Crossiant Paninni and Panera Bread Broccoli Cheese Soup

10/10- Where ever Madison wants to eat since its her Birthday!

10/11- Bacon wrapped chicken cooked on the grill, garlic parmesan orzo, and maybe roasted veggies.

10/12- Brisket, mashed potatoes, veggie

10/13- No Peek Tips, buttered noodles and veggie

10/14- Breakfast: so Pancakes and bacon and fruit

10/15- Buttermilk baked chicken, rice and veggie

10/16- Crossiant Paninni and Minestrone soup in the crockpot

10/17- Any leftovers in the fridge

10/18- DH and I have a halloween party that night, so yummy appetizers to snack on all night. The kids and grandparents will eat here, just not sure what yet.

I have a few new recipes on the menu this week. The Panera Bread soup (even though Ive had it before and it's yummy!), Parmesan Crusted tilapia, buttermilked baked chicken, and the Minestrone soup. Im excited to try them all and I will post recipe reviews with pics when I make them.
